The French Room’s menu draws on French culinary traditions and methodology with a fresh sensibility, including thoughtful table-side flourishes and a comprehensive wine program. Engaging and knowledgeable service is punctuated by moments of unexpected delight creating a new perspective on fine dining with style and grace. Guests can also partake in artisanal cocktails in the sultry and elegant French Room Bar or peruse the French Room Salon’s installation of thoughtfully curated contemporary art. The 42-piece collection ranges from drawings and collage to photography and painting, all by artists with a deep tie to Texas. Inspired by its original design and timeless European architecture — The French Room has been thoughtfully restored. The room’s refurbished plaster finish is complemented by several familiar design elements, including a honed marble floor, gilded Louis XVI style chairs reupholstered in subtly luxe fabrics, ornate sconces, and twin Italian Murano Glass chandeliers. The angelic crest found on the menu pays homage to the illustrations that once graced The French Room’s walls.  


Chef Dispensa

Born in Houston, Texas with an Italian upbringing, Anthony Dispensa, executive chef of The French Room, grew up in the kitchen with his mother and grandmother. He fell in love with the culinary arts at age 14 after receiving his first cookbook from family friend and restauranteur Tony Vallone, and spent time in restaurants with another family friend, Bill Landry, a flagship owner of the renowned Landry’s Seafood, Inc. After graduating from Johnson & Wales University in Providence, Dispensa continued his career under culinary icon Lydia Shire at her Boston-based Italian restaurant, Pignoli. In 1998, Dispensa made his way to the Four Seasons Hotel Boston. It was during his time at the hotel’s Aujourd’Jui, known for its seamless cohesion of modernity and tradition, where he developed his passion for the detail and inventiveness of French cuisine.
